The Brief

From initially meeting with one trader who we’d worked with before, CHR were introduced to Nick Johnson of Market Operations.

Having opened 2 similar sites in the Northwest in the previous 5 years and built up a strong team of trades, Nick was keen to find a “kitchen partner” that he could rely on to meet his vision.

From there CHR were further introduced to all of the potential traders for Picturedrome and the process of delving into their menu, style of service and requirements from their unit began.

Each trader has a passion for their product.  Each trader wants to deliver the best product they can as part of this collective.

Each trader wants their share of up to 2500 customers that Nick predicts will come through the doors on a Saturday.

So while the individual briefs varied in required equipment, the overall emphasis was on speed of service, flexibility to change the menu and ensuring that the energy requirements were balanced across the site.

From Market Operations point of view, we had to design a potwash area that could cope with the predicted numbers, a harmonised extract ion system that allowed for pragmatism within such a vast building whilst maintaining the adherence to DW172 as well as ensuring that noise, odours and grease were managed across the site which is so close to local residents.  We also had to make sure that fabrication across the entire venue reflected the overall design goals of the building owner.




CHR provided  all contractors with BIM level 2 drawings, from concept design through 3D visuals to construction issue.  With several kitchens and bars, internal and external all combining to create this communal space, these drawings  were crucial to the entire project team.  CHR had a huge responsibility to the other professionals working on this project, including:

  • Clients designated builder
  • Interior Designers / Concept creators
  • Joiners
  • Electricians
  • Plumbers
  • Finance

Each of these disciplines required drawings from CHR which were effectively communicated to enable them to deliver their element of the project.


Having taken the time to gather the requirements from each trader and visit the existing venues owned and operated by Market Operations, it became apparent early in the process that a variety of different energy efficient equipment would be required but that attention to detail in the specification of the fabrication would be paramount to enable these tight spaces to operate efficiently.

Where it became clear we would have to use gas equipment, we looked at the most efficient equipment available – see Synergy Grills

Market Operations have a phrase that runs through the company “Passionately Regional. Fiercely Independent. Not Available Online”

This resonates with us here at CHR and led to us specifying the job as follows.

Our suppliers:

CHR delivered over 70% of the specification from British manufactures, most of whom are within a 40 mile radius of Picturedrome itself; including ventilation, fabrication, refrigeration and cooking.

Many of them are also CEDA partners: CED Fabrications Ltd, Williams Refrigeration, Inox Fabrication, Falcon Food Service Equipment

For the remaining products we needed to procure  outside of the UK, two thirds were sourced via CEDA partners MKN, Meiko, Blue Seal and Rational

All of our specifications complied with TM50 , WRAS Approval and CE MARKED as you’d expect from a CEDA member.

Installation & Handover

CHR provided a huge amount assistance and coordination in ensuring that all other trades on site were well briefed as to what their requirements were ahead of our arrival on site to install.

Structural and electrical loads were provided along with detailed service drawings enabling the wider project team to deliver their individual elements.

This upfront work allowed for a straightforward installation of the kitchen elements.  CHR would like to extend their thanks to the wider project team in working so closely with them.

A comprehensive training and handover programme allowed the newly assembled teams across the Picturedrome site to get to grips with the installed equipment very quickly. And ensured Picturedrome was ready to open and operate as per Nick’s plans and on a very short bedding in schedule.

“The extent of my kitchen experience had come from a 3x3m gazebo in a muddy field at some of Britain’s finest festivals, so when we were invited to trade at Macclesfields 400 cover new Picturedrome alongside some of Manchester’s most established traders, I was obviously going to need some help!

Thankfully Pete & the team from CHR could not have made the process any easier. Pete was always available to meet at a mutually convenient time & place to discuss, with great patience, how he could design & install a kitchen that best fit our needs. He even arranged an outdoor demonstration of our new Synergy grill on a sunny afternoon in Altrincham – 15 miles from where our kitchen was being built!
