The Brief

In theory, this was a fairly simple brief but proved to be a difficult task with many obstacles. CHR were to bring a combination of a chefs table and a working section of the kitchen out in to the restaurant. Working closely with Adam we had to reinvent the French and make the experience more modern and add some theatre and interaction.

The Design

We understand how the kitchen works and the importance of a well-timed restaurant service so bringing these two elements together was the easy bit. The difficulty was the fact that the Midland Hotel is a Grade II listed building and we couldn’t fix to anything in the room. Hot running water was overcome with a system that heats and holds the water on demand.

The new front of house extension to the kitchen was manufactured with its own distribution board to run sockets and lighting from one connection.


“The unit is a piece of furniture and will sit for many years to come and be part of the history of this amazing place” says Scott Walker.

Service varies and they have the ability to sell the seats as full dining experience and also to use them to bring up diners for certain dishes or even courses. The flexibly is great.
