CHR Equipment, the award-winning kitchen designer and installer, has developed a range of videos to be launched on the social networking sites you Tube, facebook and twitter- to demonstrate the concept of sous-vide and other completed work.
Explains CHR’s Paul Neville, “The sous-vide technique is already used in gourmet restaurants, by chefs including Heston Blumenthal and Kevin Sousa. It yields enhanced taste and gives consistency of quality to the food prepared, but because it requires precise control of temperature and time, it has not been widely used.
However, as kitchens get smaller but the number of covers they are serving increasing, it is a very interesting way to deliver quality food quickly and consistently. “The process is not widely known. Having installed the equipment in several restaurants, including The Freemasons at Wiswell, we decided to help chefs understand how it works. What better medium than video, easily accessed via the internet?”
A family-run business, CHR’s portfolio to date includes projects as diverse as several Michelin star restaurants, Cadbury World, a new 35-cover restaurant in a Lancashire village, and hospital kitchens for patient meals; the company has won CEDA (Catering Equipment Distributors Association) national awards for its work, two years in succession, demonstrating its consistency and quality.
